I always bounce down the full mix then master as i wan't very little change to my tracks when mastering other wise i go back and fix it before i bounce down. You will always be in the ballpark at the end of your mix this way and you can just add a gain plugin for example to increase or decrease the overall levels etc for mastering unless you master it yourself ofc then most things have some kind of gain on them. If you follow the -18db 0VU settup and start with the kick drum like Sirmonkey says and balance your mix out from there, it's so much easier to get in the sweet spot lets call it. I always have Both VU and LUFS meters on my master channel at all times as well as other things like tonal balance from Izotope plus some kind of pink noise reference thats just how i work.
